“This compilation of critters aims to honor the diverse wildlife that embodies the essence of Texas, best served on a plate with the Texas western uniform. These selected critters have an important role in the ecosystem but hardly take that center stage like the cowboys we see in the old western movies that have painted a skewed campy image of Texas. This is an ode to the animals and a nod to the Lone Star State.”
